Coconut Chai Pudding with Strawberry Puree

This recipe is healthy and easy to make with only a few ingredients needed and an excellent source of omega 3 fatty acids, antioxidants and fibre.

400 ml coconut milk

75 g chia seeds

2 tbsp honey

1 tbsp lime juice

1 tsp vanilla paste or extract

1/4 tsp nutmeg

1 cup fresh strawberries pureed

 

Step by Step Instructions

Chia seeds can expand to hold up to 10 times their dry weight. In a bowl, combine the coconut milk, chia seeds, honey, lime juice, vanilla paste and nutmeg. Divide into 4 glasses and refrigerate for minimum 3 hours.

Make puree ideally using fresh strawberries. Blend in food processor or blender until pureed. Refrigerate. 

Once pudding has set, top with strawberry puree.

This dessert goes well with any fruit or combination of fruits. A sprinkle of nutmeg or cinnamon adds more flavour dimensions.
